Turmeric Cauliflower Salad (Vegan + Gluten Free)

I’ve mentioned before that I really don’t enjoy making salads at home. I don’t know why but I just feel like salads always taste 100 times better when someone else makes them.

With that said though I make salad a lot because I eat at home a lot and as much as I hate making them I do actually quite like them. Especially when they are as crazy good as this turmeric cauliflower salad that I kind of threw together without any real plan.

I saw someone on Instagram post a salad that they had gotten from a pretty popular UK coffee shop (yeah, you know the one). For someone reason it’s the one place I miss the most and I would do bad things to have one around the corner from me. So when I saw that salad I was green with envy. It looked so damn good and I had to have it.

Trouble is I’m a a few miles too far away to have gone and gotten a salad of my own so I had to take matters into my own hands and make my own without actually having any idea what I really needed and thus my new favorite salad was born.

The turmeric cauliflower was about the only part I knew for sure was going to be the main part of the salad and the rest I just kind of built from there. I had all the ingredients for falafel too so I decided that would be a great way to add protein to the salad. The rest was just kind of what I like and what I thought would go good in this.

I know quinoa is all the rage and it’s so nutrient dense but I decided to go with couscous for this salad because I’ll be honest…I don’t always love quinoa. I do like it and if it’s prepared with a lot of flavor it’s great but sometimes I’m just not feeling it. So I went with couscous but you could do quinoa if you want.

This salad was so filling, so full of flavor, and so nutritious! It’s a bit time consuming for just a salad if you make everything (cauliflower, falafel, couscous) all at the same time but it’s also great to just prep all that stuff at once and have it to eat for the next few days even if it’s not just in this salad. Once it’s done it’s so easy to throw everything together and not have to worry about lunch for a couple days.

Turmeric Cauliflower Salad (Vegan + Gluten Free)

Roasted turmeric cauliflower is the star of this salad that's topped with veggies, couscous,& falafel for protein with a lemon hummus dressing to top it off.

  • 1/2 small head of cauliflower
  • 1 tsp turmeric
  • 1 tbsp avocado oil
  • salt to taste
  • 4-6 falafel
  • 1/4 cup cooked peas
  • 1/4 cup shredded carrots
  • 1/2 cup couscous cooked
  • Romaine lettuce
  • 2 tbsp heaping hummus
  • 2 tbsp lemon juice
  • water to thin if necessary
  • Optional: dried cranberries sunflower seeds


  1. Preheat oven to 400* and chop cauliflower into bite sized florets. Sprinkle with turmeric and drizzle with avocado oil. Bake for 15-20 minutes or until a bit golden and roasted. Salt after removed from the oven
  2. At this time if you're couscous and falafel aren’t already made you can do that while you’re cauliflower is roasting.
  3. In a small bowl add hummus and lemon juice (and water if you want it to be thinner). Stir to combine and set aside.
  4. Place shredded lettuce in a bowl. Top with 2-3 pieces of falafel, cauliflower, peas, carrots, and couscous. Drizzle lemon hummus dressing on top and sprinkle with cranberries and sunflower seeds.
