Hi friends! 2017 sure was a delicious year around these parts and I’m really excited to put together the top 10 most popular recipes on my site from the past year. These are all most of my favorite recipes too so I’m glad to see you all agree! Most of them are completely plant based! I hope you all find a recipe you really love on here. This pad Thai is far and away the most popular recipe on my site and I’m glad everyone seems to love it as much as I do! It’s so simple to make and so full of a ton of flavor. It’s the perfect weeknight meal and great for leftovers as well.
Lentil sloppy joes were one of my favorite meals in 2017 and so many of you seemed to agree with me! I really loved sloppy joes as a kid which was odd because I never really liked eating meat but those were an exception. Now this version has all the same flavors and texture without the actual meat.
This recipe was absolutely random but it was just one of those that I decided to kind of throw together things that I like and thought would go well together and it turned out it worked. It’s loaded with healthy nutrients from the spinach, beans, and artichokes, and it’s just filling enough without being too heavy.
Probably my end all be all favorite soup of all time! I only make it once a year because it’s quite heavy and a bit decadent but it’s worth every single bite. The green chile gives it perfect flavor and it’s just the perfect soup for a cold winter day.
This eggplant parmesan is another twist on a childhood favorite. I loved chicken parmesan but eggplant is the perfect replacement. It’s a wonderful meal to make for a lovely Sunday dinner!
I’m a sucker for a brownie of any kind and i’ve loved experimenting with different vegan versions of brownies. These plant based brownies are sure to be a crowd pleaser and no one would know they were egg and dairy free.
This bowl is loaded with rice, sweet potatoes, and edamame and then topped with a delicious miso dressing. It’s loaded with flavor and plant based protein. It’s the perfect meal to make once and then have for lunch throughout the week!
These pastries are so simple that anyone could make them! No skills required! Although you’ll totally fool anyone into thinking you are a pastry genius who spent all day making these.
Another brownie favorite from the site this year! I’m glad to see I have found like minded people. These ones sneak sweet potato in there that add a bit of extra sweetness as well as making them a bit healthier than your average brownie.
Mac and cheese is tops as far as foods go in my book and this one is just a bit extra special with the kale and cauliflower. I adapted this recipe from a popular coffee shop in the UK after I came home and was craving it like crazy. It’s hearty, and filling, and with the added veggies it’s a meal in and of itself.
