I can’t believe I have become that person that adds vegetables into anything and everything that I can. I mean it was one thing to add kale and spinach to smoothies loaded with fruit but now I’ve taken it even farther. I’ve been adding zucchini and cauliflower to my smoothies as of late and it’s great because it’s added nutrients and you can’t even taste them.
So I guess it’s really not a surprise that I’ve made these coconut carrot snack bites and that I really love them. I mean it’s not a donut hole or anything but they are great for an afternoon snack and they are full of good for you ingredients so you can’t really go wrong.
Great ingredients + simple to make. You really can’t go wrong with these! There’s only 7 ingredients (6 if you just use one kind of nut!) and they come together in a snap. Or a pulse technically.
These keep well for about a week in the fridge or you can even freeze them if you want to have some on hand that you can just pop out of the freezer when you feel like one. The proteins and healthy fats + the natural sugars from maple syrup and the carrots make for a great energy boost when you start to feel that afternoon lull.

Coconut Carrot Bites (Vegan + Gluten Free)
Quick and easy coconut carrot bites are naturally sweetened and require only 7 ingredients. Perfect for an afternoon energy boost!
- 1/2 cup almonds
- 1/2 cup cashews
- 1/2 cup shredded carrots
- 1/4-1/2 cup shredded coconut more for rolling
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1/4 tsp pumpkin pie spice
Add all ingredients into food processor pulse until everything is chopped up into a dough. It should almost start to form a ball.
Place the “dough” into the fridge for 30-45 minutes or into the freezer for about 15 minutes to make rolling easier
Using a cookie scoop (or a regular spooscoop out dough and roll into balls.
Add some shredded coconut to a bowl and coat rolled balls in coconut.
Refrigerate in air tight container.
-You can pretty much use any combination of nuts you want. You can use all cashews or all almonds. I just used what I had when I made these. Pecans would even be good probably!
-I also didn’t have any cinnamon so just used pumpkin pie spice but if you don’t have any of that just sub cinnamon.
-You could use dates in place of maple syrup to sweeten these bites.
