Sweet Potato Breakfast Bowl (Vegan + Gluten Free)

As much as I love a really good bowl oatmeal I think I found a new breakfast love. This Sweet Potato Breakfast Bowl is 24 kinds of delicious and I’m so excited that I threw it together the other day with some extra sweet potato I had.

I had some sweet potato left over from making these chips and I had seen someone talk about sweet potato for breakfast so I decided that I needed to try it as soon as possible.

I know sweet is built in to the name but I pretty much only use sweet potatoes for savory dishes so using the maple syrup and cinnamon was fun to make it a little bit different than I’m used to. It’s also ridiculously delicious so you can’t go wrong.

Then it’s as easy as just adding whatever kind of yogurt you like, some fresh fruit, and granola for a little extra texture and flavor and then finish off with some almond butter for the perfect finish.

I loved this for breakfast so much. It was so filling and if you make the sweet potato in advanced you it’s ridiculously easy to just throw together for a quick and healthy breakfast.

It’s also really fun to trick your friends or family if you serve it to them and watch them trying to figure out what the sweet potato is. I got apples and bananas and then everyone was pleasantly surprised to find out that it was actually sweet potato. So basically it’s a totally different spin on breakfast and one that is sure to please.

Sweet Potato Breakfast Bowl (Vegan + GF)

  • 1 medium white sweet potato peeled and chopped
  • 2 cups water
  • 2 tbsp coconut milk or any other milk you like
  • 2-4 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 banana
  • ½ cup strawberries sliced
  • ½ cup yogurt
  • ½ cup granola
  • 2 tbsp almond butter melted


  1. In a small sauce pan place chopped sweet potato in water until completely covered. Let boil and cook for about 15 minutes or until fork tender.
  2. Mash potatoes and add in coconut milk, syrup, and cinnamon. Stir to combine.
  3. In a bowl add yogurt, mashed sweet potato, fruit, and sprinkle with granola.
  4. Drizzle almond butter on top to finish.
