Sushi Bowl (Vegan + Gluten Free)

It seems to me that sushi bowls are actually a thing but I completely missed the boat on them until just now. I don’t know if it’s because it’s just not a crazy big trend or just one I missed but this sushi bowl is my new favorite thing.

I always say that I love sushi but by that I really just mean I love veggie rolls. All the fish that people love to eat in sushi is just a no go for me. Spicy Tuna is as adventurous as I get when it comes to sushi and I’m not about to make that myself. I crave veggie rolls all the time though but lets be real I don’t always feel like paying 6-8 bucks for one.

So the other day I was on pinterest looking up making sushi at home because it’s always something I wanted to try. I made candy sushi years and years ago but that was it. I figured that making a veggie roll is really simple so I might as well just do it at home. But then I had an epiphany. Deconstructed sushi. All of the flavor. Way less work.

Not that making sushi is really truly that much work but I was like that’s so genius. Just throw everything in a bowl and eat it together and it’s basically the same thing. Only it’s not bite size. I was really proud of my creation and how smart I am. Turns out other people already figured this out and I’m just a little behind the times.

In all seriousness though this really was a brilliant idea. It’s literally the easiest thing in the world to make and the only reason it takes more than 10 minutes is because you have to cook the rice. Other than that you chop some veggies and some seaweed and throw it all in a bowl and you are good to go. I always get edamame when I have sushi so I steamed some to serve on the side for added protein. You can totally get creative and add anything you might like in your own bowl.

Ingredients
  • 1 cup uncooked sushi rice
  • 8 oz dried nori sheets, sliced
  • 1 large avocado
  • ½ cup shredded carrots
  • 1 cup cucumber, sliced
  • optional: sesame seeds, soy sauce, sriracha, wasabi, ginger
Instructions
  1. Cook rice to package instructions.
  2. While rice is cooking chop up all your veggies into similar size pieces.
  3. Once rice is finished build your sushi bowls with rice in the middle and veggies all around. Top with whatever toppings you like.

    1. Thank you! That’s exactly how I ate it. I just sort of went around the bowl mixing and matching bites 😂 and it’s so much less fuss than making sushi at home!
