Blueberry Almond Granola (Vegan + Gluten Free)

I have found my calling in life and that is making and eating this granola. Can that be a calling in life? If not I’m going to make it a thing.

No offense to vanilla granola but I never realized that everything that was missing in my life was almond granola. I love almond flavor things but I would have never thought about almond flavored granola. It’s life changing. Am I being too dramatic about this granola? Probably.

I’d never actually made granola from scratch before which is dumb because it’s one of my favorite things. I try not to buy it though because most of the store bought stuff is so terrible for you. Then my mom had some granola from Whole Foods and I tried it and was in love.

There was a sticker that said baked right here and you could tell it was fresh baked so my wheels started turning and I was like well I can make that and it would probably be a lot healthier cause I can control the ingredients.

So I set out to figure out what I needed and the ingredients and crossed my fingers that it was going to come out. And it did!

Like I said you realize how much of a difference there is between the homemade and store bought stuff. This isn’t jam packed with sugar and preservatives and other stuff you may not really want to be eating. You can also adjust the amount of sugar and stuff to your preference. And it’s pretty easy to adapt to your dietary preferences. You can use GF oats and agave to make it gluten free and vegan or you can just use honey if you’re not a vegan. There’s so many options. You can even use coconut sugar instead of brown sugar.

It’s perfect for breakfast with some almond milk or yogurt or just for grabbing as a little snack in the afternoon by itself.

Blueberry Almond Granola (Vegan + Gluten Free)

Serves: 6-8 Servings
 
Ingredients
  • 3 cups rolled oats (gluten-free if GF)
  • ¼ cup maple syrup, agave, or honey if not vegan
  • 3 tbsp coconut oil
  • 1 cup slivered almonds
  • 1 cup dried blueberries
  • 3 tbsp brown sugar
  • 2 ½ tsp almond extract (reserve ½ tsp)
Instructions
  1. Preheat oven to 340*
  2. While oven is preheating mix all ingredients (minus the ½ tsp of extract) in a large bowl being sure to evenly coat everything.
  3. Place granola mixture on a baking sheet in a single layer and put in oven.
  4. After 20 minutes mix the granola to make sure it browns evenly.
  5. Let cook for about another 20 minutes keeping an eye on it being careful not to let it burn or get too dark.
  6. Granola will be done when it is a toasted brown color and fragrant.
  7. Let cool and then add in the reserved ½ tsp of almond extract.
  8. Store in a bag or container for up to 2 weeks or in the freezer for up to a month.
