Roasted Red Pepper Hummus Wrap (Vegan)

Roasted Red Pepper Hummus Wrap - A quick and easy lunch. Perfect vegetarian meal for a meatless monday.

I really love wraps. They are quick and easy and filled with delicious things. What’s not to love? I also love roasted red peppers, roasted zucchini, and hummus. So what’s better than combining all of those into one thing.


I’m also the type of person who will eat the same thing for like 5 straight days in a row. That comes from mainly just cooking from my self. I always have a lot of leftovers obviously so I’m pretty used to eating the same things for days on end. Which is what I did after I made these. I roasted all the veggies and then I think I probably ate this for like three straight days. And that was fine with me because it was yummy and made for a quick easy lunch.


Other than roasting the veggies there’s not a lot that goes into making this. I roasted my veggies on a grill pan but you could also do them in the oven. You could also grill some red onion and that would be delicious in this but I didn’t think about it until just this moment. Guess that means I’ll just have to make this again soon!

Makes 4 wraps


4 whole wheat tortillas
1 red bell pepper
1 zucchini
1 yellow squash
1 tbsps olive oil
¼-½ cup hummus
4 tbsp hemp seeds(optional)
2-4 tbsp sriracha (optional)


-Heat a grill pan over medium-high heat. Cut the bell pepper in half and then into quarters. Cut the squash on the bias in evenly sized pieces.

-Put olive oil onto pan and add the veggies. Cook until they have nice grill marks and are tender.

-Heat your tortillas on a griddle until warmed and a little bit toasty. Spread an even amount of hummus on the tortillas and sprinkle an even amount of hemp seeds on top. Add sriracha if you want and then add veggies. Wrap into a burrito and serve immediately.


-If you don’t want to make all 4 at once you can just put your veggies in the fridge after and either use them for something else or make these a couple times throughout the week.
