Galentine’s Day Strawberry Cookies


I’m all for celebrating love in all it’s forms. People seem to be so jaded about Valentine’s Day because it’s a commercial holiday and why is there one day for celebrating love and whatever other reasons the holiday bothers them? Here’s the thing though there is never anything wrong with celebrating love! Ever. There’s far too much hate and ugliness in this world and we could always use more love.


With that said if you are one of those who hates Valentine’s Day because you think it’s dumb or maybe you are a little bummed about it this year because you don’t have a Valentine then why not celebrate Galentine’s Day instead?


Allow me to let Leslie Knope explain what Galentine’s Day is, “Oh it’s only the best day of the Year! Every February 13th my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It’s like Lilith Fair, minus the angst. Plus frittatas.”


Hooray for ladies celebrating ladies and the geniuses behind Parks & Rec who created Galentine’s Day. If you haven’t watched Parks & Rec and are thoroughly confused about what I’m talking about then you need to get yourself to the nearest TV with Netflix and watch Parks & Recreation right now. Thank me later.


You don’t have to celebrate Galentine’s Day exactly like Leslie and her ladies. It could just be as simple as telling the ladies in your life that you love them and you’re thankful for them. You could take it a step farther though by making these cookies for them just because you love them. You could also make them for any kind of Galentine’s Day celebration you and your girls might be having. You could also make these for Valentine’s Day of course. Or you can give half to your Galentine and the other half to your Valentine! What ever takes your fancy.


I’m pretty sure cake mix cookies are the worst kept secret but these are hands down the easiest cookies ever. So if you’ve never made them give them a go. I promise you won’t be sorry. Okay well you might be sorry if you eat half the batch without blinking because they are that good but I can’t be held responsible for that.



Makes 22-24 cookies

1 box Strawberry Cake Mix
2 eggs
½ vegetable oil
¾ cup white chocolate chips


-Preheat oven to 350 degrees. Mix the cake mix, eggs, and oil in a medium bowl. Once it’s mixed add in the chocolate chips.

-Refrigerate dough for 20 minutes.

-Scoop out dough and place on cookie sheeting pressing the dough into flat circles.

-Bake for 8-10 minutes
